I feel it's always best to run the latest version when it comes to modding Skyrim and the fact that some of the new mods that have come out in the last year require the latest version, we will most likely see this trend continue. I do not recommend downgrading your game for various reasons but the fact is the vast majority of mods have been updated for the latest game version (1.6.640) and keep in mind that most never required an update in the first place, not to mention that if anything the latest version runs better than any of the previous versions of this game.
